Hospitality cleaning has two audiences with completely different standards. The health inspector cares about the areas the guest never sees. The guest forms an opinion in the first eight feet of the entry. Both have to be right, and they need different work.
The entry is where these overlap in an expensive way. Restaurant and hotel entries are frequently stone or terrazzo, they take the heaviest traffic in the building, and they absorb grease tracked out from the kitchen and salt tracked in from the sidewalk. It is the single hardest floor in hospitality to keep right.
What is included
- Back of house degreasing on kitchen floors, including quarry tile and the grout that holds the odor
- Dining room floor care matched to the material, whether that is stone, hardwood, tile, or resilient
- Entry and vestibule stone maintained against grease, salt, and grit, which is where most damage originates
- Restroom detail on a hospitality standard rather than an office standard
- Glass, brass, and metal detail on entries and bar fronts
- Scheduling built around service hours, including post close and pre open windows
Salt season
Every winter, ice melt gets tracked across entry stone across the region and leaves a white haze that a standard mop will not remove and an aggressive cleaner will etch. It is the most predictable damage in commercial cleaning and it is almost entirely preventable with the correct matting, an adjusted winter frequency, and neutralizing chemistry used before the salt sits.
Nearly every etched hotel entry we have restored was damaged in January and February, by cleaning that was technically happening the whole time.
